Yes you can!
When you set a custom release date, your music will appear in stores on the date you specified.
The only exception is Amazon. They'll make short preview clips available before the release date--and show your album as "coming soon." They'll allow pre-orders, but won't let anyone purchase it until the release date.
Note: If it's important that your music go live in all stores at the same time, choose a release date at least 2 weeks in the future. If you choose a release date less than 2 weeks in advance, there's a chance your album could still be stuck in a stores' review queue when your release date comes around.
